PICKLED GARLIC SCAPES

Directions:

  1. Preheat oven to 350*
  2. In large mixing bowl, blend eggs and sugar
  3. Combine with oil, applesauce & zucchini
  4. Stir in remaining ingredients
  5. Pour into greased 12 cup bunt pan
  6. Bake at 350* for 1 hour or until toothpick inserted comes out clean and top is browned.
  7. Cool before slicing
  8. Enjoy!

PICKLED GARLIC

  •  Check out this link to find an awesome way to pickle garlic.  It also includes a handy garlic peeling trick too.  I tried it last year with both my Italian Purple Softneck garlic and my Red Russian garlic and it turned out amazing.  Friends I gave jars to said once they opened the jar, they could not stop eating it! Great in caesars!

  •  3 eggs
  • 1/2c sugar
  • 1/2c oil
  • 1/2c applesauce
  • 2c raw grated zucchnini
  • 2c flour
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 & 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • 1/2 tsp ground gloves
  • 1/4 tsp nutmeg
  • 2 tsp vanilla
  • 1c chopped nuts of your choice/raisins/dates/chocolate chips etc

LIGHT AND FLUFFY PUMPKIN PANCAKES

  •  I made these pancakes on Thanksgiving morning.  I made the pumpkin puree the night before out of one of the sugar pie pumpkins I had grown.  So Delicious.  I doubled the spice amounts. Yumm.

(MY) MOM'S ZUCCHINI BREAD

  •  Yes, this is actually a recipe from my very own mom!  Makes a delicious, spongy, tasty, loaf. Very easy to make!

HEALTHY ZUCCHINI BROWNIES

  •  I have not tried this one yet but it sounds amazing!  Submitted by Annabella, who dropped by my farmstand. 

GARLIC SCAPE PESTO

Directions:

  1. Put all ingredients through juicer.  Make sure to core apple.  I like to put the kale/spinach and ginger through last because they tend to clogg the holes of the juicer's blade.
  2. Pour into glass over ice & enjoy.  Make sure to drink some water after to wash the juice acids off of teeth.  Also, avoid brushing your teeth for one hour after drinking juice to protect teeth. (If you are worried about tooth enamel, drink juice through a straw.)
  3. Makes enough juice for two people.
  4. FYI: You can always taylor a juice recipe to your personal preferances/dietary restrictions.  Be creative!

Dan & Krystal's Super Juice Recipe (use organic veggies)

  • 1 large Beet
  • 2-4 Carrots (depending on size)
  • 1 Orange (include 1/4 of the peel)
  • 1 Apple
  • 1/2 lemon (inlude 1/4 of the peel)
  • small piece of ginger (to taste)
  • a few pieces of kale, or some spinach
